"Jacques Puffeney made his first wine at the age of 17, but since there was so little of it in order to earn a living he worked simultaneously as a "saleur de Comte" helping to make the fabled cheese of his region. Little by little he acquired vineyards and now the domaine consists of 7.5 hectares, all in the appellation of Arbois. Since the Arbois and the Jura region in which this village is located are relatively unknown to most Americans, especially the region's crowning glory.. Vin Jaune. Made from Savagnin and bottled in the traditional 62 cl. bottle known as a "clavelin", Vin Jaune is a wine like no other. Produced in only exceptional vintages when the Indian summer enables Savagnin to develop optimum ripeness, the wine then undergoes a most unique elevage: once fermented it must age in old oak barrels for at least 6 years without any topping up to replace the portion of wine that evaporates. A thin layer of yeast, or voile, forms on the wines surface much like a flor, used in the makimg of fino sherries. The wine, which displays an unbelievable degree of richness and complexity is balanced by a fine acidity which enable these wines to go for years! Deep golden in color, this dry wine is at once nutty and spicy, with aromas of golden raisins, resin, and ginger. Enjoy with an assortment of fine cheese or mushroom vol-au-vent. "
