" This year's Vin de Glacière sees the reintroduction of a process Bonny Doon has employed for many years, whereby grapes are picked at "normal" sugar levels, frozen to roughly 10° F and subsequently pressed while frozen. This may not be the traditional method for making the famed sweet wine of Germany, but it is way of producing something approximating ice wine in a region not known for any sort of frigidity. It also allows for the early picking of grapes while natural acidity is relatively high. This is a late harvest wine that retains the freshness and vibrancy of a dry wine, and it is racy, floral and chock full of pineapple aroma and flavor."
