"I’ve heard it said that it won’t be long before most of the Barossa’s cabernet vines are grubbed out … on the basis that climate change will make growing cabernet in the region too difficult. Problem is that the region keeps producing excellent cabernet wines … as this Shadrach cabernet shows.
Of course it’s a big, beefy wine but it copes with its alcohol very well and gives good light and shade along the way. Dried herbs, dust, chocolate, bitumen, and roasted olives - there’s a nice array of flavours on show here. Its tannins are ripe and grapey but it seems just a little confused through the finish - hence I held off from giving it even higher points. Time in the cellar may well resolve that. Very good wine though.
