"The Laurent Perrier Ultra Brut is one of the very few Champagnes shipped naked, with no dosage (finishing sugar) at all. It is a very special blend, made only from exceptionally ripe harvests. This cuvee is entirely 1995, although not labeled as a vintage and composed of half Chardonnay and half Pinot Noir from exclusively grand cru vineyards. Because of the ripe year, grand cru vineyards and long ageing time, this Champagne is dry and precise without being strident or harsh. It has great chalky grip, a rich underlying yeast quality and finish that goes on forever. It is especially fantastic with sushi! - Gary Westby, K&L"
