"Rebula has been grown in the hills of Goriška Brda since the 13th century. It translates into “re-boil” a reference towards the wine going through secondary fermentation as wine maker Jean-Michel Morel is adamant is necessary to produce character filled examples of the lightly flavored grape. He ferments it on the skins in 2400 liter oak vats for a period of 30 days then 12 months in barrel, followed by 4 months in bottle. This spicy, distinctive white has aromas reminiscent of red wine including cherry, and pepper and like the Amfora, a delicate tannic quality from its time on the skins. This brilliantly clear wine would pair with a wide variety of strongly flavored pork dishes as easily as delicate fish like Branzino, or even mushrooms."
