What makes Chablis special are the soils: chalky and mineral-rich, most of them were created by the fossil shells of a small oyster, which is ironic because Chablis is a classic choice with any kind of seafood. You can really taste Chablis’ famous soils in this well-balanced, minerally wine, which offers fresh, vibrant golden apple and Meyer lemon fruit and a steely backbone. Chablis is one of the longest-lived of dry white wines; you can cellar it for years, but I like to drink it young to appreciate its taut, crisp, minerally freshness. " Best 2008-
